Dona S. and Dona F. are agriculture experts, community leaders and have cooked for Timmy staff and volunteers during community visits and brigades in the past! These women support the Community Health Promoters in their community with nutrition workshops to teach families how to build their own food gardens. Both always rise to the occasion to strengthen their community through the work done alongside 32 Volcanes.

Main Dish: Pepian

A traditional meal from Quetzaltenango - Guatemala


Ingredients (makes 8 servings): 

4lb of chicken 

½ lb pumpkin seeds

½ lb sesame seeds

½ lb tomatillo 

1 tsp ground pepper

½ tsp ground cumin

1 tsp ground cinnamon

3 garlic cloves

1 slice of bread

Salt to taste

Directions: 

  1. Boil 2 liters of water in a pot and add the chicken with salt to taste. 

  2. Toast all other ingredients together in a skillet (except for bread)

  3. Toast bread and then add some of the chicken stock for the bread to soak in

  4. Blend all the toasted ingredients together and add those to the boiling water once the chicken is half-way done. 

  5. Blend the toasted bread with chicken stock and add to the pot once the chicken is done. Simmer for 20 minutes. 

  6. Serve with rice, a tamale or tortillas!
